Christine’s Chocolate “Brownies”

The kids call these brownies, but they started out as healthy muffins. In the absence of real desserts, the children feel like they’re eating treats. Surprisingly, these “brownies” are completely whole grain and sweetened only with dates.

1 1/2 cups oat flour (180g oats ground up in blender)
1/2 cup cocoa powder (40g)
1 tsp salt
1 tsp baking soda
3/4 cup dates, packed (170g)
3/4 cup warm water (170g)
1 cup coconut milk (200g)
3 tbs oil of your choice (35g)
1 tsp vanilla
1 tsp apple cider vinegar

Preheat oven to 350F. Grind oats into flour using high-speed blender. Empty into medium-sized bowl and whisk thoroughly with cocoa powder, salt, and baking soda.In blender jar, soak dates in warm water for at least 10 minutes (soaking for longer helps it blend smoother). Blend until smooth. Add milk, oil, vanilla, and apple cider vinegar. Blend until very smooth.

Add wet ingredients to dry, and mix well. Pour into quarter sheet pan lined with parchment paper. Also works as mini muffins.

For mini muffins: 14 mins
For quarter sheet: 25 mins
